Cheesy Barbecue Popcorn

3 tablespoons margarine
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
8 cups popped popcorn
1/2 cup grated parmesan cheese

Melt margarine; add seasonings. Pour over air-popped popcorn. Sprinkle cheese over top and mix thoroughly. (Note: To lower sodium content, substitute 1/4 teaspoon garlic powder for the garlic salt.)
Yield: 8 cups

Exchanges: 1/2 starch/bread, 1/2 medium-fat meat, 2 fat

Son's Blind Eye

My son had to have his blind eye removed this month. His eye just became too painful and red looking this summer. He was having to put ice packs on it quite a bit to help make it feel better. Over the counter pain medications like tyelenol wouldn't help him much.

At first he had a hard time with having to have this procedure done. But when the initial call came for him to come in for surgery he finally accepted it. It was done at a surgical center and had to spend the night.

It's been 4 weeks now since his surgery. He's feeling a lot better. We go for a check up on that tomorrow. In about 6 weeks they'll schedule him to meet with the ocularist for a prosthetic eye.

TOMATO, ZUCCHINI AND POTATO BAKE


Makes 4 servings
olive oil cooking spray
2 medium tomatoes, cored and sliced
2 medium zucchini, stems removed and cut on the diagonal in 1/2-inch slices
1 large russet potato, peeled and thin sliced
4 large cloves garlic, peeled and sliced 1/2 cup
loosely packed fresh basil leaves, shredded
freshly ground pepper
2 tablespoons freshly grated Parmesan cheese
Lightly coat a shallow casserole with cooking spray. Layer the zucchini slices, alternating with tomatoes slices and potato slices, overlapping slightly. Sprinkle with garlic slices and shredded basil. Season with pepper. Preheat the oven to 400 degrees. Bake until vegetables are tender, about 35 to 40 minutes. Sprinkle with parmesan cheese and broil until top is a golden brown. Serve hot.
Per serving: 98 calories (11% calories from fat),4 g protein,1 g total fat (0.6 g saturated fat),18 g carbohydrates,4 g dietary fiber,3 mg cholesterol,68 mg sodium
Diabetic exchanges: 1 carbohydrate ( 1/2 bread/starch,2 vegetable)

Getting The Voice Of Diabetes Heard by Oprah and The World

When I saw this video that Michelle posted earlier I thought this was a great opportunity to have our voices be heard by Oprah and the world. We can reach out to her to try to get her to focus her show at least once on diabetes, as a means of raising awareness.

How to do this? Very easy, fill out this form on the Oprah web site and let her and her production team know how you feel about diabetes, what things you feel need to be addressed, why is it important for her to help us raise awareness and anything else you can think of to share with her (of course, please tell her about TuDiabetes too!)

I am sure we can make an impact by having hundreds of us letting Oprah know about this, so she hopefully focuses one of her shows on diabetes!

Country Peach Tart

Our Test Kitchen staff came up with this peachy change of pace from a traditional baked fruit pie. Great for company, it's sure to impress guests--especially when it's served warm from the oven. For pretty presentation, serve slices with a dollop of reduced-fat whipped topping or a scoop of low-fat frozen yogurt.

INGREDIENTS
3/4 cup cake flour

1/2 cup whole wheat flour

6 tablespoons sugar, divided

1/2 teaspoon salt

4 tablespoons cold butter

1 tablespoon canola oil

3 tablespoons cold water

2 tablespoons buttermilk

2 tablespoons all-purpose flour

4 cups fresh or frozen sliced peaches, thawed

1 tablespoon fat-free milk


DIRECTIONS
In a small bowl, combine the cake flour, whole wheat flour, 2 tablespoons sugar and salt. Cut in butter until crumbly. Add oil and toss with a fork. Gradually add water and buttermilk, tossing with a fork until mixture sticks together. Shape dough into a ball; flatten dough. Wrap in plastic wrap and refrigerate for at least 1 hour.
On a lightly floured surface, roll out dough into a 14-in. circle. Transfer to a parchment-lined baking sheet. In a small bowl, combine 3 tablespoons sugar and all-purpose flour; add peaches and toss to coat. Spoon over pastry to within 2 in. of edges. Fold edges of pastry over peaches, leaving center uncovered. Brush folded edge with milk; sprinkle with remaining sugar.
Bake at 400° for 25-30 minutes or until crust is golden brown and filling is bubbly. Slide tart using parchment paper onto a wire rack to cool. Yield: 8 servings.

Son's Eye Appointment

My son had a check up the eye specialist yesterday for his retinopathy. His eye showed some slipping in vision so the doctor ordered a dye test. This made him nervous as he really wasn't aware of any noticable change in his vision. When the doctor read the dye test results he told my son he had some thickening in the retina. The doctors recommendation is to have some eye laser treatment to start then maybe a surgery down the road to remove some scar tissue.

Now as his mother I am also a little nervous. I hope this doesn't mean he will lose vision in that eye also. Going completely blind is one of my fears.

Update On Son's New Doctor

Finally things are falling back into a good place. My son likes the new diabetes center. Also the new nurse. He liked the feeling of the atmosphere of the place. When we left the appointment he had he said, "I already know things are going to be better." This made me feel better.

He also is doing some blood testing now. That is a plus for him. The nurse asked him to e-mail some numbers to her. He's co-operating with that. We have to go for another appointment in a couple of weeks.

I take him on Thursday for a check-up with the eye specialist for his retinopathy.

We mentioned to the nurse why we changed from the place we were going to and she said that we weren't the only ones with an issue with the other doctor.

Things are hopefully on a better track for my son.
